I was really hungry last night and it was really cold, so I wanted something hot and filling. I decided to throw together some chili with a few modifications to make it SB diet approved. It was really good and definitely filling. It was a great change from the tuna and salads that I have been eating the last 2 days.
South Beach Chili
1 pound extra lean ground beef
1 15.25oz can diced tomatoes with green chilies
1 15.25oz can black beans (drained and rinsed)
1/2 medium yellow onion chopped
1 15.25oz can beef broth
1 8oz can of tomato sauce
1 pinch cayenne pepper
1 tablespoon cumin
1 tablespoon garlic salt
Brown the beef and onions together until the meat is cooked. Drain the grease off of the meat. Combine all ingredients in a large pot and simmer for about 1 hr. Top with shredded cheese when serving.
Don't be afraid to play with the vegetables and spices. I just threw this together with things I had on hand. You could easily add in some green and red bell pepper. Or maybe even some jalapenos if you like it spicy.
