Tasty Tuesday

I am going to start 2 new things on the blog this week. The first is Tasty Tuesday where I will post a yummy recipe and the next is Wordless Wednesday where I will post just a picture. You are supposed to be able to summarize your whole day in with just that picture. So, check back tomorrow for my first Wordless Wednesday. But, here is a yummy recipe for....

Apple Banana Muffins

INGREDIENTS
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 bananas, mashed
2 small apples shredded (any kind except for green)
1/2 cup white sugar
1 egg, lightly beaten
1/3 cup butter, melted
1/4 cup packed brown sugar
3/4 teaspoon ground cinnamon
1 teaspoon vanilla extract

TOPPING
1/2 cup butter melted
3 heaping tablespoons brown sugar

DIRECTIONS
*Preheat oven to 375 degrees F. Lightly spray 12 muffin cups, or line with muffin papers.
*In a large bowl, mix together 1 1/2 cups flour, baking soda, baking powder and salt. In another bowl, beat together bananas, apples, sugars, egg, melted butter, cinnamon, and vanilla. Stir the banana-apple mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
*In a small bowl combine melted butter and brown sugar until moist and kind of runny. Drizzle over top of muffins.
*Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

I LOVE Tasty Tuesday. I've been doing it for a while now. I have people ask me for my recipes all the time and that's why I started doing it. Now I can just say check my blog. It's also made me try more recipes instead of just thinking it sounds good now I make it to see if it's really good. I enjoy cooking andcan easily fall in to the same ole rut. Not with Tasty Tuesay's! Look forward to checking out your recipes :)
